Soup! This is a quick, easy homemade soup recipe with almost no fat and very little sodium. Many people today are either weight conscious or are on a low sodium diet or a low fat diet because of a health condition they have. This recipe is delicious and can be used by anyone as a great make ahead meal. Of course, if you must, you can add salt. Take a large stock pot and add the cans of beef broth. Chop cabbage into small pieces about 2″ x 2″. Add to pot. Over high heat bring cabbage and broth to a rolling boil. Lower heat and simmer about an hour or until cabbage is almost tender. If more liquid is needed, add some of the tomato juice to cover cabbage. Bring pot back to a boil and add 1 chopped onion. Add the 2 bags of frozen mixed vegetables and the remainder of the tomato juice. Bring back to a boil and then turn down heat to simmer. Cook another 30 minutes on low or until vegetables are tender.
