A simple homemade foil device joined with wet wood chips and indirect-heat grilling transforms propane grills into barbecue smokers at minimal expense. Anyone with a multiple-burner propane grill and a little patience can bring their outdoor grilling up a level by using this technique. This method requires more patience than the standard method of igniting burners and tossing meat on the cooking grate, but the payoff in terms of flavor makes it well worth the extra steps involved. Apply dry-rub seasoning to the meat the night before cooking and allow it to sit, draped in plastic wrap, in the refrigerator. This allows the seasonings to absorb into the meat and cure it. Dump the wood chips into the bowl or bucket and cover with water, allowing the chips to soak for at least an hour prior to cooking time.
