A Leeward Islands cocktail is a rum-based drink that will make you dream of lying on the beach while sipping this gentle, delicately flavored cocktail. A Leeward Islands cocktail has a strong fruit flavor that cuts the alcohol taste of the rum quite a bit. This recipe makes one drink, served straight up, but you can strain the drink into a highball glass with crushed ice and your favorite fruit juice or club soda if you prefer. Fill a cocktail shaker half-full with crushed ice. Add 2 oz. rum and 1/4 oz. each of lemon juice, lime juice, orange juice and apricot brandy to the cocktail shaker. Cover the cocktail shaker and shake vigorously for 10 to 15 seconds. Strain the contents of the cocktail shaker into a chilled cocktail glass. Garnish the cocktail with a twisted lemon peel and serve immediately.
