This is a great Valentine’s Day dessert. Not only is it impressive, it is delicious! Ingredients: 3/4 c. sugar 1/4 c. clear cherry brandy or regular brandy 1 16oz bag frozen pitted dark cherries, halved (thaw & leave undrained) 1/4 tsp cinnamon 2 tbsp unsweetened cocoa powder 2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 1/2 stick unsalted butter, cut into small pieces 2 egg yolks 1 egg 2 tsp all purpose flour powdered sugar (for “garnish”) Fresh mint leaves Pour the cherries and juice in saucepan and combine 1/2 cup of sugar, brandy, and cinnamon in a saucepan. Heat and stir over medium heat until the sugar completely dissolves. Let simmer until the sauce begins to thicken and reduce slightly. Usually takes about 10 minutes. Using a slotted spoon, take 1/2 cup of cherries out of the sauce. Make sure to drain as much liquid from these cherries as possible. Chop the cherries into very small pieces. Set aside – these cherries will be used in the cake batter. Take
