Ingredients:

  • 4 TBSP butter
  • 1 medium onion sliced
  • 8 c chicken broth
  • Fresh herb sprigs (thyme, parsley, rosemary, or sage to go with the bird)
  • 1 bay leaf
  • Turkey drippings
  • 1/2 cup flour
  • Worcestershire sauce
  • Salt and pepper to taste

Melt the butter and add onions to cook for 10 minutes. Add the broth, herbs, and bay leaf then cover and simmer for 2 hours while your turkey roasts.

Pour turkey drippings in a separate dish and set aside to separate fat.

Ladle 1/2 c of the fat from the drippings and put it into a saucepan. Heat the fat and sprinkle the flour evenly and stir until the flour browns (4 minutes). Switch to a whisk and ladle the hot broth into the roux. Bring it to a boil and then adjust the heat so that it simmers. Skim any fat off of the top and add the pan juices to the gravy.Whisk for 10 minutes. Season with Worcestershire, salt, and pepper.
