How Do You Make A Quick Chicken Enchilada Casserole?
A quick and easy recipe for Chicken Enchilada Casserole. Boil 4 boneless chicken breasts in a medium pot for 30 minutes, then allow the chicken to cool and cut in small chunks. Mix the chicken chunks, cream of mushroom soup, cream of chicken soup, salsa and chilies in a large mixing bowl. Spray a 9 X 13 cooking pan with cooking spray. Then tear tortillas and layer the bottom of the pan, add the chicken mixture and spread a layer Monterey Jack cheese. Continue with a second layer. Cover casserole with foil and bake in the oven at 350 degrees F for 45 minutes. Take out of the oven, let cool for 15 minutes before serving. Enjoy it with a glass of your favorite white wine.
