Stuffed baked potatoes make a great side dish to any meal or add a salad and the potato can be the main course. They are easy to make and very tasty. You can even make them ahead of time and store in the fridge for up to three days. Then you can just take them out and pop them in the microwave for five minutes or so and dinner or lunch is done! Since potatoes often take and hour or more in the oven to cook, try this short cut. Preheat oven to 425 degrees. Pierce potatoes with a fork and microwave on high power for 12 minutes. Remove and bake in oven for 15 minutes. Slice off potato tops, gently scoop out the pulp without disturbing the skins. In a bowl, mash the pulp and the cheddar cheese. Put aside. Melt the butter in a small frying pan. Then add onions and saute until tender over medium heat about 5 minutes or so.
