If you are hungry for simple enchiladas but don’t have time for the cooking and rolling, here is a way to make a quick enchilada casserole that will give you the same great taste in a fraction of the time. Heat oil in the small skillet and cook the corn tortillas. Slip one tortilla into the hot oil, turn it over, remove from the oil and place on a paper towel to blot. That’s all there is to it. Make sure the oil is very hot and use tongs to handle the tortilla. Place a small amount of enchilada sauce in the bottom of the casserole dish, just enough to coat it with a thin layer. Then place a layer of cooked corn tortillas in the dish. I cut them in half so that they cover the entire bottom of the dish. Sprinkle a layer of cheese and finely chopped onion on the tortilla.
