Heat oil in the small skillet and cook the corn tortillas. Slip one tortilla into the hot oil, turn it over, remove from the oil and place on a paper towel to blot. That’s all there is to it. Make sure the oil is very hot and use tongs to handle the tortilla. Place a small amount of enchilada sauce in the bottom of the casserole dish, just enough to coat it with a thin layer. Then place a layer of cooked corn tortillas in the dish. I cut them in half so that they cover the entire bottom of the dish. Sprinkle a layer of cheese and finely chopped onion on the tortilla. If you are going to add meat, then layer it on too. Cover with sauce. Repeat for as many layers as you wish. It takes at least three layers to make a good casserole. For the final layer cover with a thick layer of cheese
