A shrimp sandwich is a great alternative to a tuna salad sandwich or a shrimp po’ boy sandwich. The simple recipe below takes about 15 to 20 minutes to prepare and yields about 4 sandwiches.

SHRIMP SALAD SANDWICH

Ingredients:

  • 1 pound cooked shrimp, peeled and de-veined
  • 1 hard-boiled egg, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 large celery stalk, finely minced
  • 1/2 tablespoon fresh dill, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • dash onion salt
  • dash garlic powder
  • dash celery salt
  • salt and pepper

Directions:

  1. Using a food processor, finely mince the shrimp. (Chop by hand if you desire a chunkier shrimp salad.)
  2. Transfer the minced shrimp into a mixing bowl and add egg, onion, celery, dill and mayonnaise.
  3. Mix well.
  4. Mix in the lemon juice, onion salt, garlic powder, celery salt, and salt and pepper (to taste).
  5. Spread mayonnaise on baguette-style French bread or any bread of your choice. Heap the shrimp salad onto the bread and, if desired, top with lettuce or spinach and tomato. Cut into halves.

Alternative ideas:

  • Consider adding chives and fresh radishes for additional flavor.
  • If you like spicy foods, add Cajun seasoning or crushed red pepper flakes (to taste).
  • Substitute crab meat for the shrimp for a crab salad sandwich; or, use 1/2 pound of crab and 1/2 pound of shrimp for a seafood salad sandwich.
