Prepare your work area and wash your hands. If you are giving the caramel sauce as gifts, you need to sanitize the bottles you are going to pour the finished sauce into. Now over medium heat, combine the white sugar, water and lemon juice in the heavy saucepan. Bring the mixture to a boil and stir constantly to smoothly dissolve the sugar into the water. Once dissolved completely, cover the pan and let boil for 2 more minutes. Uncover then and continue to boil the liquid. Toward the end of cooking time, turn down the heat very low to avoid burning the sugar or getting it too dark in color. Continue until the mixture reaches what is called the caramel stage.
