I love eggs because there are so many things you can do with them and despite what people say, they are incredibly good for you. A great source of protein and they are loaded with essential amino acids and are good for your eyes! So with that said, amongst omelets and deviled and quiches, frittata are one of my favorites. Take a skillet and add your bacon in. On low flame cook for about 10 minutes, make sure each side is a bit crispy. Than take out and place on a paper to cool and to drain. Once cool just crumble into a pie pan so that it sits on the bottom. Now just add in your squash, adding to the bacon. In a bowl start to whisk your eggs. Add in salt and pepper. Take a bowl and whisk eggs and cream together. Now pour egg mixture into the pie pan Top with cheese. Bake at 350 for about 45 minutes. As it bakes the flavors will combine and it will look beautifula nd taste deliscious. Serve warm or cool.
