Burritos are great breakfast options for busy people, as all of the ingredients are rolled into one tidy, tasty bundle. You can pack a whole grain burrito with fresh organic veggies, herbs and tofu for a super healthy breakfast choice. This recipe makes 6 (8-inch) burritos. Heat the oil in a nonstick skillet, and saute the onion and chopped green and red peppers until they turn golden. Drain and cube the tofu, and add it to the mixture in the skillet. Add the cayenne pepper and cook the mixture for about 45 seconds, mashing it with a fork as it cooks. No moisture should remain in the tofu. Add a dash of salt and freshly ground pepper to taste. Heat the canned black beans in a saucepan and keep them warm while you finish the burritos. Spoon the tofu mixture into each organic whole grain tortilla.
