These are a great breakfast for those who are looking to eat better and more naturally. Buckwheat pancakes are naturally sweet tasting and delicious! Mix all ingredients except for the berries or nuts. Coffee or cooked oats can go in with the regular batter. You want to mix only until the lumps smooth out and then stop. Fold in your berries or nuts. Cook on a frying pan greased with ¼ to ½ Tbls of “butter” over medium-low heat. You want to slowly cook these guys, I like to make smaller ones with this recipe, but you can effectively make larger ones. Flip when they are done bubbling and appear nearly cooked all the way through and just lightly brown the other side. Serve hot with Jam, butter and maple syrup, everyone likes their pancakes differently!
