How Do You Make Almond Butter Chicken With Orange Sauce?
A delicious, tasty way to break up the monotony of dinner! Put each piece of chicken breast between 2 pieces of plastic wrap, and pound with a meat mallet to about 1/4 inch thickness. Watch your fingers! Coat each piece with flour, and then sprinkle with the salt and pepper. Dip the other side in the egg and press into the almonds. Melt the butter in a large skillet and put the chicken in almond side down. Cook on medium to high heat for 3-5 minutes, or until the almonds are brown and toasted. Turn the chicken over and continue to cook until chicken is no longer pink in the middle, about 10-12 minutes. Orange Sauce- Mix brown sugar and cornstarch in a saucepan, and the juice, butter and rind. Cook on medium until thickened, keep stirring the whole time. Pour over the chicken after it is on the plate you will eat it from, or put in a small cup and dip.
