How Do You Make An Awesome Blueberry Muffin?
For those of you who think that those store-bought muffins are much too sweet (and dry), here is a great recipe that has been passed down through my family for a few generations. My grandparents had a blueberry field in Maine and I spent my summers picking berries – having these muffins for breakfast made it all worthwhile… With fork, blend together flour, sugar, salt, baking powder and Crisco. You will be “cutting” the Crisco into the mix – when done, it’s okay for the Crisco to be in small lumps. Mix together egg and milk – add to flour mixture just until wet – do not over mix! Fold in blueberries. Bake in muffin tins lined with paper baking cups – if you fill each to about half full, you should get about 15 muffins. Bake 20-25 minutes @ 400 degree preheated oven. Tops of muffins should be slightly browned.
