This is a healthy omelet recipe for the cholesterol conscious and a great breakfast to start the day with. In a medium mixing bowl add 2 egg whites and whisk. Then add 1 tablespoon of milk (whole)., pinch of paprika, a pinch of salt and a pinch of black pepper. For extra kick add a couple drops of Tabasco sauce or small amount of finely chopped jalapeƱo or green chile. Heat up a non stick skillet, add 1 tsp of Smart Balance margarine and coat the pan all over so the omelet won’t stick. Pour in the mixture you made in step one, shake pan gently until omelet firms up, top the omelet with 2 1/2 tablespoons of finely minced lean ham, 2 tablespoons finely diced fresh tomato and a tablespoon and a half finely chopped green onion. If you wish add a half tablespoon of mild cheddar cheese. Turn off heat and with your spatula gently fold over the omelet and serve. For an authentic Mexican twist, garnish with fresh chopped cilantro and salsa on the side.
