• Wash the apples, oranges and lemons. Cut them up without removing any skins or rind. • Place the cut fruit into a preserving pan and cover with cold water. Bring to the boil and simmer slowly. • Strain through a jelly bag made from flannel or muslin. Leave until all the juice is extracted. • Measure the juice and return it to the preserving pan along with 1 lb sugar to each pint of juice. Boil until the jelly sets when tested on a plate.
