• Preheat the oven to 350 degrees. Grease a baking pan, about 13 x 9 inch pan. • Combine the flour, baking powder, and baking soda. • In a large bowl, beat the vegetable shortening and bananas until smooth. Beat in the egg, milk, and lemon juice. • Blend in the dry ingredients. Pour in one cup of the coconut. • Spread the mixture evenly into the pan. Sprinkle in the last 1/2 cup of coconut over the top. Optional: Along with the coconut, sprinkle in yellow sprinkles. • Bake for about 20 minutes, when the top is lightly colored. • Let cool for about an hour. Cut into small bars and enjoy!
