This is a generic low-fat muffin recipe. What does that mean? Because these muffins are very basic, you can add your own fruits, nuts, or other flavorings and create delicious and healthier breakfast treats, time after time. Surprise your friends and family with your inventions! Sift all dry ingredients into a large mixing bowl. In another bowl, combine beaten egg, skim milk, and oil and blend with a wire whisk. Add the egg mixture to the dry ingredients all at once. Mix in your chosen add-in (see below for suggestions). Stir together just enough to moisten the batter. Avoid overstirring–it’s ok to have a few lumps in the batter. Lightly grease a 10-cup muffin pan, or 10 cups in two 6-cup pans, then fill each cup 2/3 full with the batter. Bake muffins at 400 degrees for 20 to 25 minutes, or until a knife inserted into the center of a muffin comes out clean.
