Put the rice in a covered bowl with enough cold water to cover the rice and let it sit for about 10 minutes. Drain the cold water from the rice thoroughly using a sieve, and then pour the rice into a well-greased, oven-safe ceramic dish. Mix the other ingredients and pour over the rice. Leave to soak for about 1 hour. Stir the mixture, and then place the dish in the oven to bake for about 90 minutes. Half-way though the cooking, remove the dish and stir the mixture again. Return it to the oven to complete the cooking. Remove the dish from the oven when the pudding is lightly browned on top.
