Potatoes are the ultimate comfort food, and if you are looking for a new and interesting twist on the familiar potato dishes, I have one right here. I found this one in the Better Home and Gardens Test Kitchen Favorites and decided to make it one of my own (favorites, that is). Potatoes contain more potassium (about 620 mg. per potato) than a banana and a number of vitamins and minerals. Potassium is essential to our bodies because it helps our bodies maintain optimal muscle improvement, and assists our nerve’s response to stimulation. Potassium also aids in control of our blood pressure. Scrub them with baking soda, rinse thoroughly and leave their skins on to get the most of their nutritional benefits. Preheat oven to 350 F. In your casserole dish, combine potatoes, leeks and sea salt. Stir in whipping cream. Dot with butter. Bake covered in 350 F for 30 minutes. Uncover. Gently stir. Bake for 25 to 30 minutes more until potatoes are tender. Sprinkle with Swiss cheese. Bake for 5 min
