Potatoes are the ultimate comfort food, and if you are looking for a new and interesting twist on the familiar potato dishes, I have one right here. I found this one in the Better Home and Gardens Test Kitchen Favorites and decided to make it one of my own (favorites, that is). Potatoes contain more potassium (about 620 mg. per potato) than a banana and a number of vitamins and minerals.
