Butter cream is made by combining butter and cream–hence the name–with sweeteners and other ingredients added to enhance the flavor. It’s used for both cake decorating and frosting. This recipe yields approximately 4 ½ cups of butter cream, which is enough to frost one 9-inch-by-13-inch sheet cake, or the sides and top of a double-layer, 8- or 9-inch square or round cake. Step 1 Place ½ cup (1 stick) of butter in the microwave for 20 to 30 seconds to soften. Be careful not to melt the butter. Alternatively, you can leave the butter sitting out at room temperature for 1 to 2 hours to soften. Step 2 Combine the softened butter with 4 cups of confectioners’ sugar, ¼ teaspoon of table salt, 2 tsp. of vanilla extract and ¼ cup of half and half in a large mixing bowl. Step 3 Beat the mixture using an electric mixer on medium speed for 1 to 2 minutes, or just until the butter cream is light and fluffy. Be careful not to over blend, or the mixture could become too stiff to use. Step 4 Store
