Salmon Croquettes are a family favorite at my house. Southerners love this fast and easy dish. These can also be enjoyed when prepared as finger foods for get togethers or a party by making the patties smaller. Ingredients: 1 can Pink Salmon 2 medium irish potatoes 1 small onion (chopped) 1 egg 1/2 meduim bell pepper (chopped) 1/3 cup green onions (chopped small) salt and pepper Canola or corn oil for frying 1 cup flour to be used to roll patties in Peel the irish potatoes, wash and cut into large cubes. Put in pot and cover with water. Boil potatoes until a fork goes into them easily and they are done. Drain well and keep for later. While the potatoes are cooking open the can of Salmon. Drain well, pick out the bones and remove the skin or any undesirable matter from the fish. Place fish in bowl and mix with fork. Break egg into fish and mix well.
