Caldo de Pollo is a traditional Spanish chicken soup. Making caldo de pollo in a crock pot is a great way to have delicious and easy chicken soup. Traditional Caldo de Pollo uses whole chicken pieces, with the bone in. You can use boneless chicken breast as a substitution. (note: it is usually more inexpensive to use whole chicken). I make it with boneless chicken when serving to children, to lessen my anxiety and stress of having the bone in the soup. If you use boneless chicken, cut into medium size chunks. Place meat in crock pot or slow cooker. Place frozen corn on the cob in crock pot. Take potatoes, celery, 2 onions, cabbage and carrots and cut into chunks. Place in crock pot. Add chicken broth to crock pot. You can add any seasoning: season salt, salt pepper, etc as you like. Take remaining onion and dice. Take cilantro and dice. Take limes and make wedges. Set all aside. Set crock pot to low and cook for 6 to 8 hours. Serve with tortillas, diced cilantro and onion.
