This is one of the cookie recipes that makes it onto my Christmas baking list year after year. They are so tasty, pretty and easy! The candy cane provides a gentle peppermint flavor without being overpowering. (However, if you prefer a stronger flavor, you can add 1/2 – 1t. peppermint extract along with the vanilla.) Kids can easily help make these as well. They can crush the candy canes with a rolling pin, roll the dough into balls, and roll the balls in sugar. Cream together butter or margarine and powdered sugar. Add vanilla and egg, mix for another 2 to 3 minutes, until well combined. In a small bowl, whisk or sift together flour, baking powder and salt. Slowly add to butter mixture and stir until combined. Fold in crushed candy cane pieces. For each cookie, roll about 1 t. dough into a ball then roll in granulated sugar to cover. Bake at 350 degrees for 10-12 minutes.
