Caramel apples are great any time of the year but we seem to have them more often around Halloween and at harvest time. Here is a basic caramel apple recipe, plus a nice caramel apple dip recipes to use with apple or pear slices! Wash and take the stems off the apples. Set up a pan lined with wax paper so you can set the finished apples there to cool. Melt the caramels with a little water in a double boiler or regular saucepan using low heat. Stir often until the caramels are melted. Add the vanilla and stir until sauce is smooth. A tall sauce pan is easier to coat the apples with caramel if you don’t have a double boiler. Dip each apple into the caramel, and turn until all of the apple is coated. Turn each apple away from the heat until the caramel runs slower so you get a good coating on each. Roll in ground nuts or crushed candy coated chocolates – if desired at this point. Place them on the wax paper once the coating stops running as fast. Let them set. Drizzle with melted chocolat
