Cheddar and broccoli potatoes are amazing, but they are even better when they are twice baked. Cook the potato all the way through. Leave the skin on. After the potato is cooked all the way through, let the potato cool off so you can handle it and not burn yourself. After the potato is cooled, cut off a thin layer off the entire top of the potato just enough so you have access to the insides of the potato. Don’t cut the sides! Using a small spoon, take out all of the potato insides, leaving only the skin shell behind. Leave the shell completely intact in its original form. Put all of the insides of the potato in a bowl. Take as much cheddar and cut broccoli pieces as you would like and and put it in the bowl with the potato insides. Either use a mixer or simply just mash everything together using a potato masher. Take a small spoon and carefully put the insides of the potato back into the potato skin. When you place each spoonful in, press it down with the spoon. Put in an oven until t
