Melt the butter and remove from the heat. Stir in the flour and seasonings. Add the milk gradually and stir until it is well mixed. Cook over low heat and stir constantly, until smooth and thickened. Cook for a further 5 minutes and add the cheddar cheese. Stir until well blended and smooth. Serve with dish of your choice, such as pasta or vegetables. This makes 2 cups. Alternatively, you can purchase cheddar cheese powder, which is a combination of three cheeses. It can be added to a white sauce and used for potatoes, broccoli or macaroni.
