Stir cottage cheese, shredded Monterey jack cheese, chopped onion, and salt in a large mixing bowl until well-combined. Spread 1/4 cup of enchilada sauce in bottom of pan. Arrange four tortillas over sauce, overlapping slightly. Spread one half of the cheese mixture evenly over tortillas. Top with one half cup of enchilada sauce. Repeat layers once with four tortillas, the remaining cheese mixture, and one half cup of enchilada sauce. Top with the remaining four tortillas. Gently spoon the remaining 1/4 cup of enchilada sauce over the casserole. Sprinkle with shredded cheddar cheese. Cover with aluminum foil and bake for 12 minutes.
