Give some lovin’ to your tummy with this mouth watering, scrumptious, easy cheesy Mexican chicken dish! It will be a hit for any church social or ladies luncheon. For those evenings where you just need to throw something together in a hurry…this is the meal to do it! This dish ia like a song for any occasion! Whether it’s for an every day meal or a special event. Bring the chicken broth to a boil. Stir in rice. Cover the rice and broth mixture and lower heat. Cook approximately 30 minutes or until rice is almost tender. The rice should be slightly uncooked. Saute the chicken breasts in cooking oil, on each side until brown. Remove the cooked chicken breasts and drain the fat from the frying pan. Spray a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish with cooking spray. Place the cooked chicken breasts inside the baking dish. Saute the chopped onions and garlic for about 3 minutes. Add the chopped tomatoes, pepper, chilies, cayenne pepper. Lower the heat and cook for approximately 10 minutes
