This recipe is from my mother. I grew up with caramel popcorn that was chewy instead of crunchy. I prefer it chewy so that is what this recipe is for. If you want crunchy caramel popcorn just cook the caramel mixture for an extra minute and a half. Pop 24 cups of popcorn either in an air popper or on the stove top making sure to separate the un popped kernels and thrown them away. *I have never used microwave popcorn for this so I dont know how it would turn out. Mix 1 cup of brown sugar, 1/2 cup of butter or margarine and 1/4 cup of Karo syrup. Bring mixture to a boil and let boil for 2 1/2 minutes. (If you want crunchy Caramel Corn let boil for 4 minutes). Stir in 1/2 teaspoon of salt, 1/2 tablespoon of Vanilla and 1/2 teaspoon for baking soda. Immediately pour over the popped popcorn. Stir until all the popcorn is well coated. Enjoy!
