How Do You Make Chicken, Sausage And Okra Gumbo?
This is my Cajun Sausage, Chicken, and Okra gumbo recipe, and it is authentic because I am 100% Cajun. Fill large pot halfway with water, set on stove to boil. Cook chicken uncovered one to one and a half hours. Remove chicken from Pot, let cool and remove from bones, do not dispose of broth!!. While chicken is cooling chop Vegetables into small pieces. Add Roux to Broth in pot, stir until mixed well, and dark. Add vegetables and chicken. Bring to a boil, and let simmer. Add sausage, seasonings, and canned Okra. Allow to simmer for 2-3 hours. Add green onions just before serving if desired. Add 3 cups rice, and 6 cups water to smaller pot. Bring to a boil. Once it is boiling turn fire down to simmer, and add lid to pot. Cook/simmer for 15 minutes. Allow rice to “settle” for 3-4 minutes before serving. Enjoy.
