How Do You Make Chicken Souvlaki Kebabs?
Here’s a great recipe for grilling. Chicken Souvlaki Kebabs: In a medium sized bowl, add 2 tablespoons of lemon juice, 1 cup of mayonnaise, 1 clove of garlic finely chopped, and 1 teaspoon of dried crushed oregano. Set the mixture in the refrigerator to remain chilled. Take one pound of boneless, skinless chicken breast and cut up into bite-sized cubes. Take one red onion and one green bell pepper and cut into bite-sized pieces also. Or you can use a variety of green, red, orange, or yellow bell peppers if you choose. Once everything is cut into small pieces, put on kebab skewers. Alternate pieces of chicken with onion and pepper. Finish the kebab by adding one or two cherry tomatos at the end. Use half of the refrigerated mayo mixture to brush on the kebabs. Grill over medium heat for 5 minutes on each side, or until chicken is done, turning over the kebabs only once. Serve grilled chicken souvlaki kebabs with the remaining half of the mayonnaise mixture.
