Impress your guests by making this Icebox Holiday Yule Log for your dessert or buffet table! Relatively easy to make, it’s unique combination of flavors and texture, including chocolate and brandy, will have your guests asking for more! Frost with a Chocolate Ganache Glaze or your favorite frosting. Use your imagination to decorate! Chop raisins into halves or quarters. (Scissors work well to cut the raisins.) Shave the chocolate. Prepare whipped mix according to box directions. Set mixture aside. Fold in chocolate, raisins, crushed wafer cookie crumbs, chopped cherries and brandy extract. Place mixture in large soup can that has both ends removed and freeze until firm. (Or place in plops in foil-lined cupcake papers). Remove from container, glaze and then place on serving dish. Cover and frost Yule log with Glaze: Melt 2 oz. bittersweet chocolate with 1 Tbl butter over hot water. Stir in 2 tsp. light Karo corn syrup. Cool slightly.
