A favorite for all shrimp lovers, Coconut Fried Shrimp is delicious. Learn how to bread and fry the shrimp , plus an interesting Thai Chili dipping sauce. Purchase 1 lb of 16/20* shrimp. Peel and devein* the shrimp, making deep cuts. Wash in cold running water, cover and refrigerate. Mix together the coconut and Panko* breadcrumbs. Beat the 2 eggs until completely combined, no egg white showing. Add the milk to the beaten eggs. Place the flour into a shallow dish and season with salt and white pepper. Flatten the shrimp slightly by pressing down on the backs. Squeeze the lemon juice over the shrimp. Roll the shrimp in the seasoned flour.
