Here is a simple guide on how to make it. Step 1 Put butter in a saute pan and add onions. Saute onions until they become translucent then add carrots to the mix. Toss onions and carrots over medium heat until wilted. Step 2 Add your stock, vegetable or chicken and bring to a boil. Add rice, shallots and salt and pepper to taste. Step 3 Simmer your carrot soup for about 40 minutes. Once the 40 minutes is up, puree your soup and then bring it back to a boil. Take your soup off of the heat, add cream, orange juice and a pinch of nutmeg. Pour into soup bowls and enjoy!
