Want to make a hearty homemade Potato Soup? This recipe is sure to please everyone and warm up those cold or rainy days. This soup is rich, creamy and full of flavor. This recipe makes a large pot of soup, so cut it in half if you need to but it heats up great the next day. Peel and cube potatoes. Place in large stock pot and add water to cover along with 1/2 Tblsp. of salt. I also add about a teaspoon of onion powder to mine. I love the flavor but my kids won’t eat onion. Boil potatoes just until tender, don’t cook them to soft. They will seem a little underdone, but you will cook them more in the soup. Drain potatoes in colander over large bowl. You will be catching all your potato broth to add back into the soup. Let all the water drain off the potatoes and set your broth off to the side.
