How Do You Make Creme Brulee Oatmeal?
Why settle for boring oatmeal when you can have a treat such as Creme Brulee Oatmeal. Serve it for breakfast or dessert. This recipe serves 4. Beat yolks and brown sugar in top of a double boiler. Place over boiling water and whisk until pale and thick (about 5 minutes). Cool and stir in the 3/4 cups of half-and-half. Combine water and oats in saucepan, bring to a boil and reduce heat to medium. Cook, stirring occasionally until thick (about another 5 minutes). Stir in half of yolk mixture. Fill four 6-oz ramekin cups (or other small oven proof dish) with oatmeal until 2/3 full. Top each dish with 1-2 tablespoons of the remaining yolk mixture. Sprinkle with brown sugar. Carefully torch tops of oatmeal until caramelized and golden. This can also be accomplished by broiling oatmeal three inches from the top of the oven for 1-2 minutes. Crack crispy tops and fill with additional half-and-half and fresh berries. Enjoy!
