CRUST: Mix 2 cup of chocolate cookie crumbs, 1 cup of finely chopped macadamia nuts (or the nut of your choice), 1/2 cup of melted butter, & 4 1/2 tablespoons of dark brown sugar into a greased 9×13 baking pan. Place in a 325 degree oven for about 8-10 minutes. FILLING: I use a Kitchen Aid mixer but you could use a hand mixer for this step. Combine (2) 32 ounce bars of cream cheese with 2 1/2 cups of dark brown sugar and beat until smooth. Add 1 1/2 cup of peanut butter (smooth or chunky), 2 teaspoon vanilla & 8 eggs, beat until smooth.
