How Do You Make Delicious Lentil Soup?
Lentil Soup is a great meal for those rainy cool days. Lentils have nutritional value as well as health benefits. Traditionally, I serve lentil soup on New Years Day. Lentils are a symbol of “good luck” for the New Year. Preheat oven at 350 degrees. Bake the ham slice for 45 minutes. Prepare lentils. Rinse lentils in cold water. In the stockpot, over a medium heat, add the lentils and approximately 4-cups of water (enough to cover the lentils). Once the Ham slice is baked, prepare by cutting it in cube-size pieces and add to the the stock-pot. The ham adds a nice flavor to the soup. Prepare carrots and celery stalks. Rinse, peel and cut in to pieces. Once the lentils begin to boil, lower heat and add the remaining 4-cups water and the carrots, celery, bay leaf and salt and pepper. Cover and simmer, stirring occasionally (you may need to add 1 or 2 cups of water). The lentils have a tendency to soak up the water rather quickly.
