Peanut brittle is a favorite with my family around the holidays. With this quick and easy recipe making peanut brittle has never been so easy! Put it in a cute jar or on a decorative plate. Add cellophane, a cute gift tag, and a festive bow to make a perfect economical gift for family and friends! 1. Microwave the sugar, light corn syrup and salt in a 2-quart glass bowl on HIGH for 5 minutes. 2. Stir in the peanuts and microwave 3 more minutes. 3. Stir in the butter and vanilla. Microwave the mixture 45 seconds more or until the candy is the color of peanut butter. 4. Stir in the baking soda (this will make the mixture bubble). 5. Working quickly, spread the hot candy in a thin layer onto a lightly greased baking sheet using two forks. 6. Cool completely. Break the candy into pieces and enjoy!
