Here is a delicious recipe for red velvet cake and cream cheese frosting. I’ve made it many times and im positive you’ll enjoy it. Preheat your oven to 350 F. Oil and flour 3, 9 by 1 1/2 inch, cake pans. In a medium-size bowl whisk together the eggs, buttermilk, vinegar, food coloring, and vanilla. In a large bowl sift together flour, salt, baking soda, sugar, and cocoa powder. Using a standing/hand mixer, mix the dry batter into the wet until the batter is formed. Divide the cake batter evenly into the cake pans. Rotate halfway through cooking. Bake until the batter starts separating from the edge and a toothpick can be inserted and taken out clean. Now for the frosting: Using a standing mixer or a hand mixer, mix the cream cheese, sugar, and butter until mixed completely. Now turn up the speed and mix for about 5 minutes (making sure to clean the edges). Now slow down the speed and add the vanilla, then raise the speed again until incorporated.
