Once cupcakes have baked and cooled completely, begin making the frosting. Beat pudding mix, milk, and sugar in a large bowl with a whisk for two minutes. Gently stir in Cool whip until well blended. Spread onto the cupcakes or you can store the frosting in the refrigerator for up to 24 hours. Decorate cupcakes with crushed sugar free peanut butter cups, crushed sugar free hard caramel candies, or sprinkles. This delicious recipe has very little fat and calories, but adds plenty of delicious taste that will satisfy any sweet tooth. You can also adapt this recipe to make a 9×13 cake or two 8×8 cakes for a two layer cake. Still delicious!
