Pancakes were always a treat when I was growing up. I loved the smell as they cooked on the griddle. Then I loved to stack the pancakes on my plate and put butter between each one. The taste of melted butter in the middle was oh-so-heavenly. Dutch Baby pancakes take that amazing melted butter taste one step further and the end result is sure to delight and surprise everyone. Heat the oven to 425 degrees. Place butter in saucepan (high-sided frying pan) and put in oven. Make the batter while the butter melts. In mixing bowl, beat eggs till light with whisk. Gradually pour in milk and blend. Slowly add the flour and blend. Make sure batter is smooth. [You can use a blender instead of a mixing bowl. Add all ingredients at once and blend until smooth.] Remove pan from oven and pour batter into melted butter. Return pan to oven and bake until pancake is puffy and well browned – 20 to 25 minutes. Pancake should rise and climb up the sides of the pan. Slide pancake onto a serving dish. Serve
