On a cold winter’s day, this is a delicious and hearty soup to make! My family loves this soup and I find it is a great way to sneak vegetables into my children’s diet. Serve with some crusty bread or warm dinner rolls. This soup recipe can be fixed in a soup pot on the stove or all day long in a crock pot. Cook the ground beef or ground turkey, onions, and garlic in a skillet over medium high heat until completely cooked. Drain. Place the beef and onion mixture in a soup pot or crock pot. Add to the pots the kidney beans, carrots, celery, rice, stewed tomatoes, water, beef bouillon, parsley, salt, basil, and pepper. Stir together. Cover the pot or the crock pot with a lid. Simmer the soup on the stove for 2 to 3 hours or in the crock pot for 8 hours. Add the frozen green beans in the last hour of cooking.
