This is a fantastic recipe for anyone who loves tacos or burritos. It is so easy and delicious. Start the slow cooker about 6 – 8 hours before you would like to eat and add the pork roast. No water needed. The natural juices from the meat and veggies will keep it moist. Slice up as many jalapenos as you would like and about 1/2 of a white onion. Add them to the meat in the slow cooker. Add cumin seasoning. Very important! This is what really gives it the taste of carnitas. Use as much as you would like. Usually a couple of teaspoons is good. It really depends on how spicy you would like it. Add a little bit of garlic powder to the meat. After the meat is cooked, take it out of the slow cooker and shred or cut up. Add back to the slow cooker to keep warm. Take out your heated corn or flour tortillas and fill with the meat. The onions and jalapenos will have cooked down, but the juices will be in there.
