Who could argue over cheesy potato soup being one of the best comfort foods there is. Anyone who knows me, knows I prefer the best recipe, but it must be made the most simple way. So this is one of my home made recipes for, as I call it, easy cheesy potato soup. First peal, and chop up into small pieces, your 6 potatoes. Add potatoes to boiling water, enough to just cover potatoes. Add in 3 or 4 Tablespoons of minced onions. Sprinkle in Wyler’s chicken broth granules (It is what I like to use). Next, add 2 tablespoons sea salt (the only salt I use). 1 teaspoon pepper. Medium boil around 15 minutes, or till you can easily get a fork through potatoes. Turn down heat to low. Add milk, butter. Add grated cheese as needed, till thick soup consistency. Stir constantly. Remove from heat. Taste test for proper seasoning. Sprinkle a little parsley on top. Enjoy!
