I know what your thinking “microwave peanut butter fudge?” It sounds crazy I know but believe me this easy candy recipe is delicious! When I’m strapped for time and need to bring a dish to a dinner this microwave peanut butter fudge saves me. Microwave butter and peanut butter for 2 minutes on high for this easy candy recipe. Then remove mixture from microwave. Stir, then microwave on high for an additional 2 minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. This easy candy recipe is pretty thick so knead it until it’s nice and creamy. If it cools down too quick it won’t mix as well. If this happens just pop it back in the microwave for a few seconds, not too long or you might burn your hands. Place in a buttered plate press until you reach your desired thickness, damp hands and smooth, you can also line plate with waxed paper if you would like. Refrigerate until cool.
