Peanut brittle is a classic Christmas favorite, but the traditional method of making it is difficult and time consuming. With this recipe you won’t have to worry about using a candy thermometer or adding ingredients at precisely the right temperature. Make peanut brittle easily in the microwave in 15 minutes. Mix the peanuts, sugar, corn syrup and salt together in the casserole dish. Make sure you use a glass dish; this mixture will get so hot it will melt anything plastic.
