This is a very easy and basic Rice Pudding recipe. It is so basic that I leave it up to you to use your imagination and add your favorite spices and flavors to make it your own! First, preheat your oven to 325 degrees. Coat a 1 1/2 quart baking dish with non stick cooking spray. Set the dish aside. In a medium mixing bowl, combine the egg whites, egg, milk, sugar and vanilla. Whisk until well-combined. Stir in the rice and raisins. This is the part where you can make this basic rice pudding into your own specialty. Along with all of the ingredients from the above step, feel free to add a few of your favorites. Add your own spices or along with the vanilla extract add some of your other favorite extracts! Pour pudding into the prepared dish. Bake for 30 minutes. Stir the pudding. Bake for another 20-25 minutes, or until the liquid is absorbed.
